Guess who got a new Vitamix?! Yep, I did!!
And let me just tell you, in one day, I used it half a dozen times. It is by far my new favorite in the kitchen.
One of the things I have been learning is just how important it is to feed our brains the food it needs so that it can function at its highest level. The downside of this with kids (and maybe some adults too), is knowing what the brain needs and knowing what they will eat are often two different things.
The Vitamix turns brain food into good food!
Sunday alone, my kids both enjoyed green smoothies for breakfast. What makes it green? Spinach, y’all. Now I can tell you right now that neither kid would willingly eat a spinach salad, sauted spinach, or any version of the green stuff. However, they drank and LOVED the green smoothie which boasts 2 cups of spinach. What makes it good? The few grapes, pineapple, and banana that is mixed in. In their minds, it’s a fruit smoothie. But mom here gets the glory of knowing they are receiving the vital nutrients they need and an abundance of antioxidants to help fight the free radicals within their brains.
After making the smoothie, I opted to try a soup recipe that evening. While I plan to tweak it slightly, as it needs more salt and pepper, I will say that dinner was another win for making brain food good food. I made a tomato bisque soup recipe that I found here on Pinterest. We ate it as with my favorite chips – Late July Chia and Quinoa Chips. And while it made a great meal, I think I will be adding this recipe into my side dish rotation. The reason I am going to do this is because of the vast amount of soup the recipe makes. It is the perfect dish to make once, portion and freeze for quick and easy meal prep. Since my oldest daughter ate 2 bowls of the soup for dinner, I’ll likely be adding it into her thermos for those days that she takes her lunch to school. Win Win!
Besides the smoothies and soup, my youngest and I enjoyed prepping all our veggies for the week using this machine. I am still learning some of the ins-and-outs of the chopping mechanism, but all-in-all, I am a very satisfied Vitamix owner. I definitely recommend it!
